Delicious Meal in 30 Minutes:

If you want to try new yet easy to make dishes, look at the following recipe for Arroz Con Pollo – Arroz con pollo is a classic Spanish dish that is fit for the gods. Every Spanish speaking country makes arroz con pollo different. Here is my recipe. Â

Serves 6-8Â

Cooking time Aprox: 35-40minÂ

  • 1 3-4 pound chickenÂ

  • 2 teaspoons saltÂ

  • 4 tablespoon oil Â

  • 1 medium onion, choppedÂ

  • 2 garlic cloves, mincedÂ

  • 1 medium red bell pepper, choppedÂ

  • 2 medium tomatoes, choppedÂ

  • 1 green bell pepper, choppedÂ

  • 1/2 cup pitted green olivesÂ

  • 1 teaspoon dried oreganoÂ

  • 1 1/2 cups tomato sauceÂ

  • 4 cups waterÂ

  • 2 cups white riceÂ

  • Salt to tasteÂ

Cooking Method:Â

Cut the chicken in serving size pieces, wash and sprinkle with salt. If keeping skin, brown chicken over medium heat in a large fry pan until golden. If removing skin, omit browning.Â

Heat oil in large stewpot at medium heat.Â

Stir in onion, garlic, and spices. Stir over medium heat until onion softens, about 3 – 5 minutes.Â

Add chopped tomato, green/red bell pepper, olives, oregano and tomato sauce. Stir for 2 minutes.Â

Add one cup of water and reserved chicken. Cook for 15 minutes over medium heat, turning occasionally.Â

Raise heat to high, and add remaining 3 cups water. When it comes to a boil, add rice, and mix well. Bring to a boil again. Lower heat to medium and allow to cook uncovered, until water is absorbed. Taste for seasoning and add salt if necessary. Lower heat, cover and cook for 20 minutesÂ
